Holy Guacamole!

Heh… I’m on a role, aren’t I? It’s been over a year, and I’ve finally made my way back into the blogsphere. I think I need to start keeping myself accountable. I’ve had a lot of things happen within the past year: I got a boyfriend, we went on a lot of vacations, we moved into a new neighborhood, I’m an auntie, we’ve finally settled into our new apartment annnnnd I’m an auntie! (See below for a picture of the cutie patootie.)

As I’ve been getting myself settled, I realized that I haven’t been on my blog in literally* forever. And as I’ve been cooking more and more—our friends have even started a cookbook club that we’re happily a part of—this is the perfect time for a reboot.

*Exaggerated. It’s only been 14 months.

Today, I leave you with a really simple recipe that doesn’t take a lot of brain cells or skill. I make this often when I’m feel guac-y. It’s a serving for one person as a snack, if you’re a food monster like me. It makes about a cup of guacamole… a very fresh and limey guacamole. The best thing is that you only need four ingredients.


Serving(s): 1 person
Time: 10 minutes

What You’ll Need: 

  • 1 big and ripe avocado
  • 1/2 juicy lime
  • handful of chopped cilantro
  • 2 pinches of salt

How You’ll Do It: 

  1. Cut the avocado in half, take out the pit and use a spoon to scrap all that goodness into your pestle and mortar. You can also use a small bowl. Make sure you’re clear of that stemmy thing that likes to fall out.
  2. Take you pestle (or spoon) and mash the avocado. I like mine chunky, so I didn’t beat the avocado up too much.
  3. Once at desired chunkiness, squeeze in lime juice, salt and chopped cilantro, and then mix away until everything has been evenly distributed.
  4. Go to the couch (bring your fresh guacamole and favorite tortilla chips), turn on your favorite show or movie, and munch-munch-munch away!

Note: I like Late July’s sublime-flavored tortilla chips. Clearly, I love my lime.
