Day 11. 

IT’S FRIDAY, YA’LL. And that makes me very excited. This week went by pretty fast, but I’m glad it’s over. Christmas is only 7 days away, and I’ll be counting down the hours. This weekend is ALL about Christmas! Tonight, Sam and I are heading down to the beach house to set up decorations and for the dinner party that we’re having tomorrow night. My childhood best friends are coming down with their significant others, and we are going to eat, drink and be VERY merry! Maybe we’ll even dance around the Christmas tree. And if time permits, I want to take them to our favorite brunch place on Sunday!

I’ve put together an elaborate menu, which I will share with you in time. I have stop the the holy trinity as I like to call it — Whole Foods, Wegmans and Trader Joe’s — after work today. I’m hoping I can take a half day.

Last night I got home very early. I coached my usual barbell class until 7:30pm, and since it was my rest day, I just headed home to eat dinner (mac and cheese) and bake some more goodies. I was drawing a blank on that I wanted to make. I was just staring at the pantry hoping some inspiration will just somehow dawn upon me. Nope.

I opened the fridge… scarce. It was like the Sahara Desert in there, but the whipped chocolate buttercream did catch my eye. I had quite a bit leftover from baking 100 cupcakes last weekend. Then I remembered buying a couple bags of mini marshmallows last week because I want to eventually embark on making a meringue buttercream eventually. So we have chocolate and we have marshmallows… S’mores cupcakes anyone? They were so easy to make! The marshmallows weren’t being very cooperative… but it would have helped if I had my mini torch with me. I left it down at the beach house, so I had to broil the marshmallows in the oven for a few minutes to let them toast. I got carried away doing something else and they were in the oven for a minute too long. Oh well. It all worked out.

I came up with a vanilla cupcake with whipped chocolate buttercream and a toasted marshmallow topping. I used this vanilla cake recipe from Sally’s Baking Addiction and this whipped chocolate buttercream frosting from iambaker. The only thing I changed with the frosting is that I didn’t use as much sugar. I used 3/4 of what the recipe calls for… and I added extra cocoa because I like richness. Oh and I also added about 1/4-1/2 cup of heavy cream because… “whipped.”

So here I am. Ready for the weekend. I woke up at 4:30am this morning to get to the 5am class for a workout and I’m absolutely pooped from all this cardio! I got into work and devoured a breakfast burrito, mini-quiches and a ton of veggies… and now I’m slurping my coffee and sleeping with my eyes open.

On to the weekend! SO MUCH IN STORE. The best week of this baking adventure is coming up and I can’t wait for CHRISTMAS! But you probably already knew that.
