Super simple recipe for you all today… for BREAKFAST, my favorite meal of the day. It’s the best because…. well bacon and maple syrup. ‘Nuff said. This will take you like 5 minutes and totally guilt free. I love. Saturdays are now known as protein pancake Saturday’s. It’s become a tradition.
This makes 2 medium pancakes
1 tsp coconut oil
1 very ripe banana, mashed
1 scoop of protein, I used About Time Birthday Cake
1 tbsp almond butter
1 egg1/2 tsp vanilla extract
1/2 tsp almond extract
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp baking powder
pinch of salt
How you’ll do it:
1) Put all of the ingredients except coconut oil into a medium bowl and mix until smooth. It might take a while and it might look like it’s going to be to thick, but keep stirring for about 3 minutes. It will come together.
2) Heat a pan on medium-high.
3) Add coconut email and wait until melted then add half of the batter. Cook about 1 minute on each side. Keep a close eye on these. These cook very quickly.
Serve with egg, bacon, avocado and drizzle of maple syrup for the most fulfilling, healthy breakfast you’ll ever have.
